This 2025 Vin de Pays de l’Hérault is a fine white wine from the Languedoc, produced by Mas de Daumas Gassac in the Upper Gassac Valley in Aniane. The 2025 vintage is based on an original blend dominated by Viognier (35 per cent) and Chardonnay (24 per cent), complemented by Petit Manseng (15 per cent), Chenin Blanc (10 per cent), Muscat Petit Grain and several rare grape varieties such as Marsanne, Roussanne, Petit Courbu and Fiano. The grapes, harvested by hand between late August and early September, come from soils of calcareous gravel and white Lutetian limestone. The winemaking process involves skin contact for 2 to 3 days, followed by fermentation in stainless steel tanks, then ageing for 5 months in tanks, in order to preserve the freshness and aromatic expression of this white Vin de Pays de l’Hérault. The Mas de Daumas Gassac Blanc 2025 offers an expressive nose of white-fleshed fruits, citrus and flowers, with a fresh, full-bodied and smooth palate, underpinned by lovely structure. Served at around 10 to 12 °C, this fine white wine from the Languedoc pairs equally well with aperitifs, fish, seafood, scallops, poultry in cream sauce or risotto. It can be enjoyed whilst young for its fruitiness and freshness, or laid down for several years to allow notes of honey and candied fruit to develop.
