Blanc de Blancs Les Pierrières 2020 - Ulysse Collin

This 2020 Blanc de Blancs Les Pierrières Champagne is a single-vineyard cuvée from Ulysse Collin, made from Chardonnay grapes grown in the Les Pierrières vineyard, in Vert-Toulon, within the Coteaux du Petit Morin appellation. This plot, covering approximately 1.2 hectares, rests on outcropping chalk rich in black flint and benefits from a south-easterly aspect – characteristics that lend the Champagne Chardonnay a particularly mineral and taut character. Vinification involves spontaneous fermentation in oak barrels, followed by ageing on the lees and then a long period of maturation in the bottle. The Les Pierrières 2020 reveals an expressive nose of white flowers, white-fleshed fruits and citrus, accompanied by slightly spicy notes and a mineral structure evoking chalk and flint. On the palate, this Blanc de Blancs Extra Brut Champagne is straightforward and full-bodied, with a vinous texture balanced by lovely freshness and a chalky, salty and lingering finish. This Champagne Chardonnay is the perfect accompaniment to seafood, raw or grilled fish, scallops, poultry with morel mushrooms or mature Comté cheese, and will appeal to lovers of single-vineyard Champagnes, Blanc de Blancs Extra Brut and Ulysse Collin’s terroir-driven cuvées.
