This 2019 Marsannay Fleur de Pinot is a Burgundy rosé wine produced by Domaine Sylvain Pataille from Pinot Noir grapes grown on limestone soils using organic and biodynamic methods. This unique cuvée from the Marsannay vineyard, in the Côte de Nuits, is characterised by a minimally interventionist winemaking process using indigenous yeasts, followed by two years’ ageing in demi-muids and barrels, and then further ageing in the cellar. Its salmon-pink colour is complemented by an expressive nose marked by fresh red fruits, cherry, floral notes and delicate spicy hints. On the palate, this 2019 Marsannay rosé boasts a full-bodied and aromatic structure, lovely freshness and remarkable length, with a texture that brings it closer to a great white wine than to a classic rosé. A true food-friendly wine, the 2019 Fleur de Pinot pairs equally well with fine fish, such as pikeperch in beurre blanc or seafood, as well as white meats and poultry, and should be served at around 12 °C to preserve its full freshness and aromatic expression.
