This 2017 Côtes du Jura Les Survivants is a white wine from the Jura produced by Jean-François Ganevat from Chardonnay grapes that survived the severe frosts of spring 2017, which hit the Jura vineyards hard. This rare cuvée thus brings together the surviving Chardonnay grapes from several plots on the estate, resulting in a particularly small harvest but highly concentrated grapes. Fermented with indigenous yeasts and then aged for around three years on the lees in demi-muids, this Jura Chardonnay is vinified with very little intervention: no fining, no filtration and no added sulphur. The nose reveals aromas of ripe apple and pear, candied citrus and white flowers, accompanied by mineral and slightly toasty notes. On the palate, Les Survivants 2017 offers a concentrated, straightforward and full-bodied texture, underpinned by lovely freshness and a lingering, briny finish. This white Côtes du Jura pairs perfectly with fine fish, seafood, scallops, poultry in cream sauce or Jura cheeses, and will continue to develop in the cellar for several years.
