L’Étoile « Là-Bas » Chardonnay sous voile 2020 - Nicolas Jacob

This 2020 L’Étoile ‘Là-Bas’ Chardonnay sous voile is a white wine from the Jura, produced by Nicolas Jacob from Chardonnay grapes grown on old vines planted in 1983 on the marl soils of the L’Étoile appellation. This single-vineyard cuvée is aged under a veil, a traditional Jura method that allows the wine to develop a unique and complex character whilst retaining a lovely freshness. The nose reveals aromas of citrus, white-fleshed fruit and stone, accompanied by notes of walnut, ripe apple and a delicate smoky hint. On the palate, this Jura Chardonnay offers a full-bodied and lively texture, underpinned by a salty, mineral structure and a long finish, characterised by the effects of ageing under a veil. Nicolas Jacob’s approach, based on spontaneous fermentation and minimal intervention in the cellar, brings out the full expression of the L’Étoile terroir and the Chardonnay grape. Served at around 12°C, this L’Étoile Là-Bas 2020 is the perfect accompaniment to Jura cuisine, mature Comté cheese, morels in cream sauce, poultry or fish in sauce.
