This white wine from the Jura is a 2018 Arbois-Pupillin Savagnin produced by Pierre Overnoy, an iconic figure in Jura viticulture and a pioneer of natural winemaking. Made exclusively from the Savagnin grape variety, this wine comes from the limestone and marl soils of Pupillin, renowned for giving Savagnin a particularly distinctive character. The wine is made without any oenological interventions, using natural fermentation and ageing under a veil of yeast, which develops the characteristics specific to the great wines of the Jura. The nose reveals aromas of nuts, ripe apple, spices and slightly oxidative notes, whilst the palate offers a full-bodied texture, lovely tension and a lingering finish. This 2018 Arbois-Pupillin Savagnin is the perfect accompaniment to Jura specialities, particularly mature Comté cheese, dishes featuring morel mushrooms, poultry in cream sauce or fish in sauce. It can also be enjoyed on its own to appreciate the full complexity of Savagnin and how it evolves over time. Served at around 13–14°C, this Jura white wine has excellent ageing potential.
